Tossed Garden Salad with Thousand Island Dressing
Fresh, colorful, and finished with a dressing worth craving.
Some salads are included simply because a meal needs something green. This is not one of them.
Our Tossed Garden Salad earned its place in the Easy Peasy Pantry rotation during our take-and-bake days, then made its way to Duckett’s Produce as a ready-to-enjoy salad kit. Each one was packed with crisp greens, fresh vegetables, sharp cheddar, and a separate cup of our house-made Thousand Island dressing. It was colorful, convenient, and substantial enough to feel like something far more special than an obligatory side salad.
And then there was the dressing.
Creamy, tangy, a little sweet, and completely crave-worthy, it was the part that tied every crisp, colorful bite together. This is the kind of dressing that makes you keep dipping vegetables long after the salad bowl is empty—and the kind of recipe people remember.
From Our Kitchen to Duckett’s Produce
When we prepared these salads for our take-and-bake meals, we wanted them to feel as carefully made as everything else leaving our kitchen. Freshness mattered, but so did the experience of opening the container and seeing all that color: bright tomatoes, cool cucumber, peppery radishes, red onion, cheddar, and crisp greens arranged around a cup of pink Thousand Island dressing.
Later, we packaged them as salad kits for Duckett’s Produce, keeping the dressing separate so every ingredient stayed fresh and crisp until it was time to toss. They were simple by design, but never plain. That balance—familiar ingredients, thoughtful preparation, and one truly memorable dressing—is what made them work.
The Dressing Does the Heavy Lifting
A garden salad is only as memorable as the dressing you pour over it, and this one refuses to be an afterthought. Our Thousand Island dressing begins with a creamy mayonnaise base, then gets its rosy color and familiar sweetness from ketchup. White vinegar brings the tang, sweet pickle relish adds little bursts of texture, and dried onion gives the whole thing a savory backbone.
The most important ingredient may be time. Give the dressing at least 30 minutes in the refrigerator before serving. That short rest softens the dried onion and allows the sweetness, acidity, and seasoning to settle into one smooth, crave-worthy flavor.
Built for Color and Crunch
The beauty of a tossed garden salad is that every ingredient brings something different to the bowl. Romaine provides structure, while iceberg delivers that unmistakable cold crunch. Cherry tomatoes add sweetness, cucumber keeps things cool, carrots bring color, and radishes lend a fresh peppery bite. Red onion cuts through the creamy dressing, and sharp cheddar makes the salad feel generous and complete.
The key is washing and drying the greens thoroughly. Dressing clings beautifully to dry lettuce; wet lettuce dilutes it and leaves everything sliding around the bottom of the bowl. A salad spinner is helpful, but clean kitchen towels work just as well.
Make It Your Own
This is the combination we used for our take-and-bake meals and salad kits, but a garden salad should always leave a little room for preference. Add croutons, crispy fried onions, sunflower seeds, or anything else that brings a satisfying crunch. Swap vegetables based on what is fresh, what is in season, or what your family will happily eat.
Just keep the balance: crisp greens, colorful vegetables, something rich, and plenty of texture. Once the Thousand Island dressing joins the bowl, it all comes together.
Easy Peasy Pantry Tossed Garden Salad with Thousand Island Dressing
Serves 8 as a side • Prep: 25 minutes • Chill: 30 minutes • Total Time: 55 minutes
Ingredients
For the Salad
2 heads romaine lettuce, chopped
½ head iceberg lettuce, chopped
10 cherry tomatoes, halved
½ English cucumber, sliced
1 medium carrot, shredded
3 radishes, thinly sliced
¼ red onion, thinly sliced
2 ounces medium cheddar cheese, freshly shredded
For the Thousand Island Dressing
1 cup mayonnaise—we use Duke’s
¼ cup ketchup
2 tablespoons white vinegar
1 tablespoon plus 1 teaspoon granulated sugar
1 tablespoon plus 1 teaspoon sweet pickle relish
2 teaspoons dried minced onion
¼ teaspoon kosher salt
⅛ teaspoon freshly ground black pepper
Method
1. Make the dressing. In a medium bowl, whisk together the mayonnaise, ketchup, white vinegar, sugar, sweet pickle relish, dried onion, kosher salt, and black pepper until smooth and evenly combined.
2. Give it time. Cover the dressing and refrigerate for at least 30 minutes. This allows the dried onion to soften and gives the flavors time to settle together.
3. Prepare the greens. Wash the romaine and iceberg lettuce thoroughly, then dry them completely. Chop both into comfortable, bite-sized pieces and place them in a large serving bowl.
4. Prep the garden. Halve the cherry tomatoes, slice the cucumber and radishes, shred the carrot and cheddar, and thinly slice the red onion.
5. Build the salad. Arrange the tomatoes, cucumber, carrot, radishes, red onion, and cheddar over the chopped greens. If preparing the salad ahead, cover and refrigerate it without the dressing.
6. Toss and serve. Just before serving, add enough chilled Thousand Island dressing to lightly coat the salad. Begin with about half, toss well, and add more as desired. Serve the remaining dressing on the side.
Easy Peasy Tip: Add croutons, crispy fried onions, sunflower seeds, or another favorite crunchy topping immediately before serving.
Make-Ahead Note: The dressing can be prepared one day ahead and kept refrigerated in a covered container. For the freshest texture, keep the salad and dressing separate until serving.
Allergen Note: Contains egg and milk. Always check the labels of your mayonnaise, ketchup, relish, cheese, and optional toppings when preparing this recipe for someone with food allergies.
