We start this cheesecake with a classic Graham cracker crust made with brown sugar and butter. We then pour in a tart, yet sweet, key lime cheesecake batter and bake for an hour- in a water bath. After an overnight in the refrigerator, we grate lime zest all over, and top with sweetened, vanilla whipped cream.
