There are certain meals that don’t need an introduction. 

You smell them cooking and immediately know what kind of night it’s going to be. 

Meatloaf is one of those meals. 

It’s warm. It’s familiar. It belongs beside a pile of mashed potatoes, something green, and maybe a biscuit if you’re really doing things right. 

But this isn’t just any meatloaf. 

 The Meatloaf That Became an Easy Peasy Pantry Favorite 

Back in our take-and-bake days, we made a lot of food. 

Week after week, we cooked, packed, labeled, loaded, delivered, cleaned up, and started all over again. 

Some recipes came and went. 

Others earned a permanent place in the Easy Peasy Pantry story. 

This meatloaf was one of them. 

Our Meatloaf with Signature Meatloaf Sauce became one of the most popular entrées in our entire lineup. 

And we completely understood why. 

It has everything we want in comfort food: rich ground chuck, peppers and onions, garlic, cheddar cheese tucked right into the meatloaf, fresh parsley, and just enough seasoning to let everything work together. 

Then there’s the sauce. 

Oh, that sauce. 

Sweet. Tangy. Peppery. Sticking around the edges once it comes out of the oven. 

It’s simple enough that you might look at the ingredient list and think, That’s it? 

Yep. 

That’s it. 

Sometimes the best recipes don’t need twelve obscure ingredients and three hours of your life. 

They just need the right ingredients in the right proportions. 

And because we love y’all, we’re finally sharing the recipe that so many of our customers enjoyed from our kitchen. 

Consider this one of those little pieces of Easy Peasy Pantry history that we could have kept tucked safely inside the recipe book. 

Instead, we’re handing it over to you.

That’s when you know a recipe has done its job.

Why You’ll Love This Meatloaf 

This is a great meatloaf for people who want traditional comfort food without making dinner complicated. 

The 80/20 ground chuck keeps it rich and flavorful, while finely diced bell pepper, sweet onion and garlic add flavor throughout the loaf. 

Shredded cheddar melts right into the mixture. 

Panko breadcrumbs and egg hold everything together without turning it into a brick. 

And that Signature Meatloaf Sauce gives you the sweet-and-tangy glazed top that might just be the best part. 

Best of all? 

You can have the whole thing on the table in about 30–45 minutes of bake time. 


Before you start:

Preheat your oven to 400°F. 

Finely dice your green bell pepper and sweet onion. Mince the garlic, and finely chop your parsley. 

Having everything ready before you start mixing makes this recipe considerably easier. 

And there is one very important rule when making meatloaf: 

Don’t overwork it. 

The more aggressively you mix and compact ground beef, the denser your finished meatloaf can become. 

We want a meatloaf. 

Not a doorstop. 

Use your hands or a large spoon and mix only until everything is evenly incorporated. 


How to Make Easy Peasy Pantry Meatloaf

Step 1: Prep the Vegetables 

Small dice is important here. 

Dice ¼ green bell pepper and ½ sweet onion into small pieces, then mince 2 garlic cloves. 

You want little bits of flavor running throughout the meatloaf rather than large chunks that can cause the loaf to fall apart when sliced. 

Step 2: Build the Meatloaf Mixture 

Place 1 pound of 80/20 ground chuck into a large mixing bowl. 

Add your prepared green bell pepper, sweet onion and garlic. 

Then add: 

2 ounces shredded medium cheddar cheese 

1 tablespoon ketchup 

½ tablespoon mustard 

1 teaspoon Worchestershire Sauce 

1 egg 

1½ tablespoons finely chopped Italian parsley 

⅓ cup plain Panko breadcrumbs 

½ teaspoon kosher salt 

¼ teaspoon freshly ground black pepper 

Now gently mix everything together. 

Your hands are honestly the easiest tool for this job. 

Just remember: 

Gentle is the name of the game. 

Stop mixing once the ingredients are evenly distributed. 

Step 3: Shape the Meatloaf 

Gently form it into a football shaped loaf. 

Try to make the thickness reasonably even from one end to the other so it cooks evenly. 

Transfer the loaf to your sheet pan, lined with parchment paper.  

A lightly shaped loaf gives the finished meatloaf a much better texture. 

Step 4: Bake 

Place the meatloaf into your preheated 400°F oven. 

Bake for 10 minutes then turn your oven temperature down to 350°F.

Bake for approximately 25–35 minutes, or until the center reaches an internal temperature of 140°F. 

Because ovens and the exact shape of your loaf vary, start checking toward the earlier end of the cooking window rather than relying entirely on the clock.

Now for the Good Stuff: Signature Meatloaf Sauce

Our sauce couldn't be much easier. 

Be sure to make this part while your meatloaf is baking.

In a small saucepot, combine: 

½ cup ketchup 

¼ cup light brown sugar 

1 teaspoon apple cider vinegar 

¼ teaspoon freshly ground black pepper 

Mix until the brown sugar is thoroughly incorporated and the sauce is smooth. 

Bring to a gentle simmer over medium low heat - just until it starts bubbling.

That’s it. 

No complicated reduction. 

Simple works. 

Step 5: Sauce That Meatloaf 

Pour the Signature Meatloaf Sauce generously over the top of the baked meatloaf. 

Take it right toward the edges. 

Those edges? 

Fight amongst yourselves. 

Step 6: Let It Rest 

This part is harder than it sounds because your kitchen now smells like meatloaf and brown sugar. 

But give it a few minutes. 

Allow the meatloaf to rest before slicing. 

That short rest helps the juices settle back into the meat instead of immediately running onto your cutting board. 

Then slice it thick. 

And make sure everybody gets some of that glazed top. 


Easy Peasy Pantry Tip 

Keep the vegetables small. 

There’s a reason we specify small diced peppers and onions. 

Smaller pieces disperse throughout the meatloaf, giving you flavor in every bite while helping the loaf stay together. 

And once again for the people in the back: 

Don't overmix your meatloaf. 

Mix it just enough. 

That’s one of the little secrets to keeping it tender. 

What to Serve With Meatloaf 

Around here, meatloaf practically begs for mashed potatoes. 

Add green beans, roasted vegetables, corn, peas, mac and cheese, a simple salad or your favorite bread and you've got yourself a proper comfort-food dinner. 

And if you're fortunate enough to have leftovers? 

Cold meatloaf sandwiches the next day are absolutely fair game. 

A thick slice of meatloaf, a little extra sauce, good bread... 

We will not judge.

Easy Peasy Pantry Meatloaf with Signature Meatloaf Sauce 

Serves: 2–3 servings  - Time: 30–45 minutes total bake time  - Source: Easy Peasy Pantry 

Meatloaf Ingredients 

1 pound - Ground Chuck (80/20) 

¼ each - Green Bell Pepper, small diced 

½ each - Sweet Onion, small diced 

2 each - Garlic Cloves, minced 

2 ounces - Medium Cheddar Cheese, shredded 

1 TBSP - Ketchup 

½ TBSP - Mustard 

1 tsp - Worchestershire Sauce 

1 each - Egg 

1 ½ TBSP - Italian Parsley, finely chopped 

1/3 cup - Panko Breadcrumbs, plain 

½ tsp - Kosher Salt 

¼ tsp - Black Pepper, fresh ground 

Signature Meatloaf Sauce Ingredients 

½ cup - Ketchup 

¼ cup - Light Brown Sugar 

1 tsp - Apple Cider Vinegar 

¼ tsp - Black Pepper, fresh ground 

Method:

1. Preheat oven to 400°F. 

2. Small dice the green bell pepper and sweet onion. Mince the garlic, shred the cheddar cheese and finely chop the Italian parsley. 

3. Place the ground chuck into a large mixing bowl. 

4. Add the green bell pepper, sweet onion, garlic, cheddar cheese, ketchup, mustard, Worchestershire Sauce, egg, Italian parsley, Panko breadcrumbs, kosher salt and black pepper. 

5. Gently mix until all ingredients are evenly incorporated. Do not overmix. 

6. Transfer the mixture to a sheet pan lined with parchment and gently shape into a loaf. 

7. Bake for 10 minutes at 400°F then turn your oven down to 350°F. 

8. Bake for approximately 25–35 minutes, or until the center of the meatloaf reaches 140°F. 

9. Remove from the oven.

10. In a small saucepot, combine the ketchup, light brown sugar, apple cider vinegar and freshly ground black pepper for the Signature Meatloaf Sauce. Stir until smooth. 

11. Bring the sauce to a gentle simmer over medium low heat.

12. Generously pour the Signature Meatloaf Sauce over the top of the meatloaf. 

13. Allow the meatloaf to rest for several minutes before slicing. 

14. Slice, serve and make sure everybody gets plenty of that Signature Meatloaf Sauce.
